Yummy Spinach Salad


So I try really hard to make sure that Eric and I have a salad everyday. You know, just to try and be healthy people and im pretty sure "greens" reduce your chance of getting cancer(a great perk). Anyways, I get so sick of all the regular salad dressings that you buy from the store so I have been experimenting and making delicious new salads for us. Here is one recipe that we both really like and if anyone has a great recipe...PLEASE let me know!


Spinach Leaves

1-2 cap fulls of olive oil

1 cap full of apple cider vinegar

Salt and pepper to taste

Raisins

A couple sprinkles of grated parmesean cheese

A Year Already...


OK so i know that this post is like a month and a half past when it happened but Eric and I had our 1 year anniversary on June 13th! I really can't believe that I have been married to my sweet husband for a year already. The time goes so fast. Anyways, we went away for this weekend to a resort in the Ogden canyon. It was so beautiful being tucked away in the mountains for a couple days. But we did some hot-tubbin, a little driving around to check out the area and got all dressed up to go out to dinner. Oh yeah, so I did the very traditional thing of saving the top of the wedding cake and eating it on the first anniversary, and it actually worked. Our cake still tasted good after 1 whole year!!!! So if anyone needs tips on how to preserve cake I have all the secrets:) Eric and I also watched our wedding video and that was the most amazing thing. I love seeing/hearing what we said, what we did and most importantly watching all our facial reactions. It was like every sweet glance and kiss was captured on video and we have it forever! Sorry to go on and on but basically I absolutely love our wedding video! But here are some photos from our fun weekend together.

Happy Birthday!

Alisha is 23!It was my birthday on the 7th! Eric took me shopping so that was really fun. Then we went to Tucanos for Dinner. Neither of us have downed so much food in one sitting in quite some time but it was goooooooood!

Well my wonderful family gave me a huge thing of balloons, some beautiful flowers and lots of money! And I got a ton of cards from family and some more flowers from Eric! Oh yeah, my family sent me a Cheesecake from the Cheesecake Factory! It was Amazing!!! And when I woke up that morning I noticed that our porch step was all decorated with birthday wishes! Thanks everyone!

Lovin the Sun

Well a couple weeks ago Eric and I drove to southern California. And it only took like 9 hours each way! (I thought it would take a lot longer). Anways we had so much fun while down there and we actually got a chance to lay in the hot hot sun! But being that I haven't been in the sun in about 9 months I was blessed with a nice bright sun burn. So Eric got the wonderful job of lathering me up with aloe for a few days..haha.

Reading is fun!

Well if anyone is looking for a good book to read I highly suggest the Hunger Games by Suzanne Collins. It's a non-stop read...I finished it in a couple days. This is a fictional book about what life is like in the future of America.

Graduation

Well I did it...I am now officially a college graduate!!! And there I am ringing the "victory bell" on campus(I even waited in line to do that). It's a little weird thinking that I won't be going back to school in the fall but I think somehow I'll survive...haha. So if you don't know I attended Brigham Young University and got a B.A. in Communications with an emphasis in Advertising and a minor in Business Management. I absolutely loved my major and would recommend it to anyone.

Anways, this was such a fun time and especially because I had my family here! We got to take my parents around BYU, Provo and of course Sub Zero Ice Cream

A Tribute to 8 Minute Abs

So Every now and then when i don't feel like doing crunches alone, I get on you tube and enjoy an abs session with "8 minute abs". Well, Eric decided he wanted to get in on this,which completely shocked me(he is always throwing me surprises:)). So we have started doing this together every night! 8 minute abs is so much fun!!! You get to work out with the video people who are all decked out in their royal blue spandex, have the best nineties hairstyles and always give you encouraging words such as "come on gang" "your doing great gang" and "now put your hands on your abdominals. You won't have to dig to far for long" . HaHa.

Me and my Homie Charlie

Paint = Pretty House


So Eric and I live in a 2 bedroom duplex in Provo just north of campus. When we first moved in the walls were painted with one streaky coat of red paint. It was fun for a while but after finding time here and there we have managed to change the wall color for the better. Actually, I have give almost all the credit to Eric. He is a champ when it comes to painting!

Our First Christmas

This year we went up to Washington to be with my family for about 5 days and then traveled down to California to spend a few days with Eric's family as well. It was crazy getting into WA because we ended up flying the day of a horrible snow storm. Our flight was delayed leaving Salt Lake because Seattle was not letting any flights in. But finally we got on our way. It took forever to land though because the pilot kept saying that the runway was "unsafe". Yeah scary. It was a very uneasy moment when they decided to land the plane and the runway was completely covered in snow. But thankfully we made it safe and just had to endure the two hour extended drive home due to the unpleasant weather conditions.

We spent Christmas Day in Washington and
woke up to tons of Santa gifts and stockings!

We tried to make a snowman but the snow got
so cold that it was crunchy so Eric being Eric
had a great idea to just wet down the snow
with a "water bottle" to make it pac together.
HaHa...it ended up not working out so well.














The day after Christmas we left way early in the morning (4am) to fly to California. My poor parents had to drive us in to Seattle at that horrible hour :) So we also thought that flying so early would be smart so we wouldn't have to be stuck in long lines of holiday travel. Yeah, turns out everyone else had our same idea. The lines were so long inside(wrapped around several counters and extended so far we couldn't tell where the line ended) that we ended up waiting outside in the curb side check in for 45 minutes. Good thing we got there early.

We had a great time in California. We got to see all of Eric's family and got a little bit of warmer weather as well as more Christmas! All of us went to see the movie Marley & Me which we will recommend seeing if you can handle a few tears. Oh yeah, we also saw Four Christmases when we were in WA. It was funny but certainly not what I expected.

So you are probably wondering about why Eric is next to this Pontiac Solstice. Well, get ready for a story. So Eric had an interview with the company Bovis Lend Lease for an internship this summer. The interview was in downtown L.A. in the morning of the day we were leaving to come back to Utah. We figured to rent a car to drive up to L.A. and then drop it off at the airport as we left. Turns out rental cars were really hard to come by. We finally had a place that had one car left. They told us that is was a two door pontiac. So of course we were thinking just a small compact car that would surely have a back seat. Well we go to pick up the car and they give us the Solstice. Ok this thing is tiny. There is the driver and passenger seat and that is it. No back seat to be found! I mean it was a very nice looking car but we had luggage to take with us. But looking at the car it appeared to have a large trunk so we figured things would be fine. So Later that night we pop the trunk only to find that the majority of the trunck is taken up with what I can only think are speakers. So we had a tiny freak out moment because we had 4 large suitcases/duffel bags to get in that car. So we were able to squeeze smaller bags into the trunk if we took things out of them and shoved them in every spot possible. Then(luckily I am short)we had to put one bag on the floor board where my feet should go and then I held onto another large duffel bag in my lap. This was such a sight. I had a limited view of anything and we drove the 45 minutes up to L.A. It was actually pretty hilarious and I can only imagine what the valet was thinking when we pulled up to park the car. Ha Ha. But i was able to get out and stretch my legs while exploring the city while Eric was in his interview. But we made it to the airport and had an easy travel home to Utah.

*Incase you were wondering Charles survived being at home for 10 days without us! We had people go over every couple days to make sure he was ok and had food but he was sooooo happy when we finally came home!
